Angel hair pasta with leeks and cream recipe details
Ingredients
150 g | leeks |
2 tbsp | unsalted butter |
2 medium | eggs |
8 tbsp | Parmesan cheese, freshly grated |
2 tbsp | light cream |
salt and fresh ground pepper to taste | |
250 g | dried angel hair pasta (or 175 g fresh) |
Instructions
Clean the leeks under cold water. Slit the leeks lengthwise three-fourths of the way down to the root ends. Cut the white portions and tender green tops crosswise into very thin slices.In a wide frying pan over medium heat, melt the butter. Add the leeks and sauté, stirring, until tender, about 5 minutes. Remove from the heat, cover and keep warm.
In a bowl, beat together the eggs, 2 tablespoons of Parmesan cheese, the cream, and salt and pepper to taste. Set aside.
In a large pot, bring 3 litre salted water to a boil. Add the pasta and cook until almost al dente. Drain the pasta, add it to the frying pan holding the leeks and raise the heat to high. Pour in the egg mixture and stir vigorously until the eggs are firm but not dry, 1-2 minutes.
Transfer to a warmed serving dish and serve immediately. Pass the remaining 6 tablespoons Parmesan cheese at the table.
