Zucchini stew recipe details
Ingredients
1 medium | onion |
800 g | zucchini squash, green or yellow |
1 | cucumber |
3 medium | tomatoes |
2 | bell peppers, any color |
500 g | ground meat, (half beef half pork or turkey) |
1 ½ l | vegetable broth |
250 g | elbow maccheroni noodles |
½ bunch(es) | dill, fresh |
salt and pepper | |
garlic powder | |
1 tbsp | vegetable oil |
Instructions
Boil noodles in salted water until al dente and drain.Peel and dice onion and sauté in 1 tbsp vegetable oil.
Add ground meat and brown, seasoning with salt, pepper and garlic powder.
Wash zucchini and cut into bite-size cubes. Peel cucumber, remove seeds. Cut tomatoes in half and remove seeds as well. Do the same with the peppers. Cut all vegetables into bite-size pieces.
Once the meat is done, add vegetable broth, chopped dill and veggies.
Bring to a boil and cook for about 15-20 min or until vegetables are done. Add noodles, heat through and serve immediately.
Should you wish to reheat leftovers, do not add noodles to the stew as they will get too done if re-heated. Instead, store separately and add right before eating.
