Ingredients

4 tbsp vegetable oil or ghee
1  red chili, seeded and finely chopped
1  green chili, seeded and finely chopped
2 tsp beans (urid dal), washed, soaked in cold water and drained
6  curry leaves
175 g potatoes, peeled and diced
350 g green beans, topped, tailed and cut
salt
1 tbsp desiccated coconut

Instructions

Heat the oil in a pan and fry the chilies, urid dal and curry leaves for a few minutes. Add the potatoes and continue frying for 5 – 6 minutes. Add the green beans, salt and desiccated coconut. Cover and cook for about 5 minutes until the potatoes are tender, and serve.
