Zucchini onion relish recipe details
Ingredients
500 g | zucchini, diced |
500 g | onions, diced |
70 ml | olive oil |
45 ml | vinegar, apple cider |
20 g | garlic, finely chopped |
3 small | red chillies, slashed lengthwise |
1 tsp | salt |
1 tsp | black pepper, freshly ground |
½ tsp | mace powder |
3 tbsp | sugar |
¼ tsp | brown mustard seeds, freshly ground |
¼ tsp | coriander seeds, freshly ground |
¼ tsp | allspice, freshly ground |
½ tsp | ginger powder |
Instructions
Heat the oil and fry the zucchini and onion over low heat for about 20 minutes. Stir frequently.Add the remaining ingredients and simmer for about 30 minutes. Stir frequently.
Put the relish into sterilised jars, seal well and turn the jars upside down. Let cool for about 15 minutes and turn back.
Stored cool and dark the relish stays fresh for about 12 months.
Opened, stored in the fridge, it stays fresh for about 1 to 2 weeks.
Serving suggestion:serve with grilled meat or fish or warm it up and mix with plain rice.
