Zesty vegetable beef soup recipe details
When I lived in Chicago a friend of mine gave me this recipe for those cold Chicago weekends when you had nothing to do but shovel snow and watch the plows come by and cover your side walk as soon as you were done. It’s very tasty, and after a big bowl you don’t mind the snow so much, But you still hate them plows!!! But I live in Florida now & still love this soup, SNOW OR NO SNOW!!!

Ingredients
Serves: 6-
BROTH:
- 2 qts water
- 3 pounds beef short ribs w/bones
- 1 lg onion quartered
- 2 celery ribs quartered
- 2 med carrots quartered
- 8 whole allspice
- 2 bay leaves
- 1 tablespoon salt
- 1/2 tablespoon pepper SOUP:
- 1 Qt V-8(R) Juice (Tangy)
- 3 celery ribs sliced
- 2 med potatoes peeled & cubed
- 2 med carrots pleeled & sliced
- 1 med onion diced
- 2 teaspoons Worcestershire sauce
- 1/2 teaspoon Tabasco sauce
- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried basil
- 1/4 teaspoon chili powder
- 1 cup uncooked noodles
Preparation method
Prep: 30 mins | Cook: 3 hours1. In a Dutch oven or soup kettle, bring broth ingredients to a boil. Reduce heat; cover & simmer for 2 hours or until meat is tender. Remove ribs; Allow to cool. Skim fat & strain broth; Discard vegetables & seasonings. Remove meat from bones & cut into bite-size pieces; Return to broth.
2. Add 1st ten soup ingredients;(I also chop up the celery leaves & add them) Bring to a boil. Reduce heat; Cover & simmer for 1 hour or until vegetables are tender. Stir in noodles. Return to a boil; Reduce heat & Cook uncovered, For 15 Mins or until noodles are tender. ENJOY…
