Layered breakfast pie recipe details
The breakfast you love just put in a pie. The thing is, it’s all layered–so even the eggs are fried and placed on top, instead of being whisked then added. You can add what you like but this is my favorite, enjoy.

Ingredients
Makes: 1 pie- 4 sausage links
- 6 slices smoky bacon
- 1 (13 ounce) can beans in tomato sauce
- 1 onion, chopped
- 2 tomatoes, sliced
- 4 eggs
- Salt and black pepper
- 1 sheet puff pastry
- 1 or 2 sheets short crust pastry
- Oil for frying
Preparation method
Prep: 35 mins | Cook: 25 mins1. Fry sausages in a skillet, then cut lengthwise. Fry bacon and set aside, then fry onions and set aside.
2. Place short crust pastry on bottom of a pie dish, making sure the pastry comes up over the sides of the dish to encase all ingredients.
3. First put half of the chopped onion in the bottom of the pie, then place the sausages, sliced tomatoes, bacon, and the rest of onions. Pour the beans in tomato sauce over the top.
4. In a skillet, fry the eggs until slightly set, and place them gently on pie, trying not to break the eggs. Season with salt and pepper and set the puff pastry pie lid on top of the pie; crimp pie edges together.
5. Make slit in top of pie and cook at 350 degrees F (180 degrees C) for 25 minutes, or until pastry lid is puffy and golden brown.Alternate method
You can use all puff pastry or all short crust, it’s an alternative to a breakfast pie made with whisked eggs. Anything can be layered in this pie… It’s worth giving it a go, my family loves it.
