Ingredients
250 g | beef (e.g. rump steak or sirloin) |
2 | shallots or small onions, chopped |
5 | Asian scallions, sliced |
1 handful | sawtooth coriander (pak chee farang ), roughly chopped |
1 handful | cilantro, chopped |
1 tbsp | rice powder (raw rice roasted and ground) |
1 tbsp | ground dried chillies |
For the Dressing: | |
1 | coriander root, large, scraped |
1 pinch(es) | salt |
3 clove(s) | garlic, peeled |
3 | bird eye chillies |
1 ½ tbsp | white sugar |
1 tbsp | palm sugar (pound in a mortar before use) |
4 tbsp | lime juice |
2 tbsp | fish sauce |
Instructions
Grill the beef to your taste, or fry in the wok in little oil. Frying the beef about 3 minutes on each side (for 250 grams of beef) cooks the meat “medium well”. Wrap in aluminium foil and wait about 10 minutes, then cut into slices.For the dressing, grind in a mortar: coriander root with salt, add garlic, then chillies, then sugar, then lime juice and finally fish sauce.
Pour into a bowl: onions, scallions, cilantro, sawtooth coriander, ground chillies and rice powder. Toss, then add meat and dressing. Toss again, arrange on plates, and serve.
