Ingredients
100 g | rice |
1 | onion |
30 g | butter |
1 ½ l | vegetable stock |
250 g | yoghurt |
2 | egg yolks |
salt and black pepper, to taste | |
1 tbsp | dried mint |
fresh lemon juice |
Instructions
Rinse the rice with cold water, then drain. Finely chop the onion. Sauté in 15g butter until lucent. Add the rice and the vegetable stock,bring to a boil and simmer for 15-20 minutes, until the rice is done. Remove the soup from the heat and allow to cool.In a bowl, mix the yoghurt and the egg yolks, add some tablespoons of the lukewarm soup and stir well. Finally stir the mixture into the soup.
Reheat the soup stirring constantly, but don’t allow to boil again, otherwise the yoghurt curdles. Season to taste with salt and pepper.
In a skillet heat the remaining butter and add in the dried mint. Stir until the butter starts to foam. Stir the mixture into the soup.
Serve the lemon juice with the soup, to refine individually.
