Ingredients
1 l | vegetable stock |
400 g | Vialone rice |
30 g | butter |
3 tbsp | olive oil |
100 ml | dry white wine |
100 g | fresh spinach leaves, stems removed |
50 g | freshly grated Parmesan cheese |
30 g | butter |
salt and pepper | |
rosemary | |
paprika powder | |
oregano |
Instructions
In a heavy pot heat the 30g butter and the olive oil. Add the rice and stir with a wooden spoon until rice turns slightly glassy. Season with salt, pepper, paprika and herbs. Then add the wine; when the wine is about ¾ ‘s absorbed, reduce the heat to the lowest setting and ladle in enough stock to cover the risotto. Repeat this process for 15 minutes. Stirring helps to make the risotto creamy!Now add the spinach leaves and mix well. Cook for another 5-10 minutes until the rice is cooked well. Now add the cheese and the butter, mix well and serve hot.
