Wok fried chicken with asparagus recipe details
Ingredients
1 | chicken breast, skinless, sliced |
250 g | asparagus, woody ends discarded, cut into 2cm lengths |
2 tbsp | peanut oil |
1 clove(s) | garlic, minced |
100 g | bean sprouts |
2 tbsp | oyster sauce |
1 tbsp | Chinese rice wine, mixed with 1 tsp cornflour |
2 | spring onions, chopped |
½ tsp | salt |
½ tsp | sugar |
For the marinade: | |
1 tbsp | soy sauce |
1 tbsp | Chinese rice wine |
1 tsp | cornflour |
Instructions
Combine the ingredients for the marinade in a bowl and toss the chicken to coat.Cook the asparagus in simmering salted water for one minute, drain and refresh under cold water.
Heat the wok until hot and add the oil. Add the garlic and toss for one minute to flavour the oil, then discard.
Add the chicken, and fry over high heat for two minutes until lightly coloured. Remove the chicken, add a little extra oil if necessary and, when hot, add the asparagus and fry for two minutes.
Add the bean sprouts, soy sauce and oyster sauce, salt and sugar, and fry for two minutes until hot.
Return the chicken to the pan.
Mix the remaining rice wine and cornflour and add to the pan. Bring to the boil, and toss everything until the sauce thickens. Add the spring onions, toss well and serve.
