Chicken fricassee with asparagus and peas recipe details
Ingredients
500 g | chicken breast fillet |
2 tbsp | oil |
500 ml | chicken broth |
100 ml | white wine |
500 g | asparagus, woody ends removed |
200 g | frozen peas |
½ bunch(es) | parsley |
100 g | single cream |
1 tsp | corn starch |
salt and pepper |
Instructions
Cut the chicken breast fillet into stripes. In a large saucepan, heat the oil and sauté the meat over high heat. Deglaze with the white wine and the broth and bring to a boil.Cut the asparagus into 3 cm long pieces and add the asparagus and the peas to the meat. Cover the saucepan and cook over medium heat for 6-10 minutes.
Chop the parsley. Add the single cream to the fricassee. In a bowl, stir the corn starch with 1-2 teaspoons of water until smooth and add this to the fricassee. Bring to a boil again. Season to taste with salt and pepper.
Sprinkle with the parsley and serve with rice, ribbon noodles or boiled potatoes.
