Winter vegetable potage recipe details
Ingredients
1 ½ tbsp | butter |
2 medium | leeks, sliced |
800 ml | vegetable broth |
200 g | broccoli, chopped |
200 g | carrots, peeled, sliced |
2 large | potatoes, peeled, cubed |
200 g | cabbage, sliced |
1 tsp | dried rosemary |
salt and pepper, to taste |
Instructions
Melt butter in a large saucepan over low heat. Add leeks and cover. Cook until just softened, about 5 minutes.Add broth, vegetables, potatoes, cabbage and rosemary. Bring to a boil and then reduce heat; partially cover pan and cook until all vegetables are tender, about 15 minutes.
Season with salt and pepper, if required.
