Ingredients

Serves: 4

• 1 pound ground beef
• 1 small red onion, chopped
• 1 (15 1/4 ounce) can whole kernel corn, drained
• 10 (6 inch) corn tortillas, chopped into bite-size pieces
• 1 (8 ounce) bottle taco sauce
• 1 1/4 cups shredded Cheddar cheese

Preparation method

Prep: 5 mins | Cook: 15 mins

1. Combine beef and onion in a large skillet and set over medium heat. Cook, stirring, for about 10 minutes to thoroughly brown the meat. Pour off excess liquid.
2. Stir in corn, tortilla pieces, taco sauce, and 1 cup Cheddar cheese. Cook for 1 to 2 more minutes. When all ingredients are hot, top with the rest of the cheese and serve.
