Ingredients
salt and freshly ground black pepper | |
2 l | home made vegetable stock |
16 | freshly picked sage leaves |
olive oil | |
2 | carrots, chopped |
2 | red onions, chopped |
2 stalk(s) | celery, chopped |
4 clove(s) | garlic, crushed |
1 handful | rosemary, chopped |
1 | dried hot chili pepper, chopped |
1 large | butternut squash, peeled, seeded and roughly chopped |
Instructions
In a saucepan heat the oil. Stir in the sage and fry until browned for half a minute. Take out with a slotted spoon and drain on kitchen paper.Fry the onions, celery and carrots for a few minutes, then add the squash, rosemary and chili. Deglaze with the stock and bring to a boil. Cook for 30 minutes or until the squash is soft. Purée the soup with a hand blender and season to taste with salt and pepper.
Ladle the soup into soup bowls, sprinkle with the sage and serve with fresh crusty bread.
