Ingredients

salt and freshly ground black pepper
2 l home made vegetable stock
16  freshly picked sage leaves
olive oil
2  carrots, chopped
2  red onions, chopped
2 stalk(s) celery, chopped
4 clove(s) garlic, crushed
1 handful rosemary, chopped
1  dried hot chili pepper, chopped
1 large butternut squash, peeled, seeded and roughly chopped

Instructions

In a saucepan heat the oil. Stir in the sage and fry until browned for half a minute. Take out with a slotted spoon and drain on kitchen paper.

Fry the onions, celery and carrots for a few minutes, then add the squash, rosemary and chili. Deglaze with the stock and bring to a boil. Cook for 30 minutes or until the squash is soft. Purée the soup with a hand blender and season to taste with salt and pepper.

Ladle the soup into soup bowls, sprinkle with the sage and serve with fresh crusty bread.
