Ingredients
Serves: 4- 1 1/2 cups water
- 1 cup dry white wine
- 2 green onions, sliced
- 8 black peppercorns
- 4 (6 ounce) salmon fillets
- Sauce:
- 1/3 cup sour cream
- 1/4 cup Greek yogurt
- 1/3 up diced cucumber
- 2 tablespoons chopped fresh dill
- 1 tablespoon prepared horseradish
- 2 teaspoons fresh lemon juice
- 1/4 teaspoon salt
- 1/8 teaspoon fresh ground black pepper
Preparation method
Prep: 1 hour 45 mins | Cook: 6 mins1. Pour water and wine into a large skillet. Add scallions, peppercorns, and salmon; set over high heat.
2. When mixture comes to a boil, turn heat down to medium-low and place a lid on the pan. Cook for about 6 minutes, until salmon is opaque and flakes easily.
3. While salmon cooks: stir remaining ingredients together in a bowl.
4. Lift salmon out of the poaching liquid onto a plate. Top with sauce and serve.
