Salmon gently cooked in a spicy wine broth, then topped with a creamy horseradish sauce.

Ingredients

Serves: 4
  • 1 1/2 cups water
  • 1 cup dry white wine
  • 2 green onions, sliced
  • 8 black peppercorns
  • 4 (6 ounce) salmon fillets
  • Sauce:
  • 1/3 cup sour cream
  • 1/4 cup Greek yogurt
  • 1/3 up diced cucumber
  • 2 tablespoons chopped fresh dill
  • 1 tablespoon prepared horseradish
  • 2 teaspoons fresh lemon juice
  • 1/4 teaspoon salt
  • 1/8 teaspoon fresh ground black pepper

Preparation method

Prep: 1 hour 45 mins | Cook: 6 mins

1. Pour water and wine into a large skillet. Add scallions, peppercorns, and salmon; set over high heat.
2. When mixture comes to a boil, turn heat down to medium-low and place a lid on the pan. Cook for about 6 minutes, until salmon is opaque and flakes easily.
3. While salmon cooks: stir remaining ingredients together in a bowl.
4. Lift salmon out of the poaching liquid onto a plate. Top with sauce and serve.
