Ingredients
Serves: 4- 1 (4 pound) beef tenderloin roast
- 2 teaspoons salt
- 1 1/2 teaspoons black pepper
- 1 tablespoon vegetable oil
- 1 onion, chopped
- 3 garlic cloves, crushed
- 6 sprigs fresh thyme
- 2 cups dry red wine
- 1 1/4 cups water
Preparation method
Prep: 15 mins | Cook: 45 mins1. Preheat oven to 450 degrees F.
2. Season the beef roast with salt and pepper. Pour vegetable oil into a large skillet and set over medium-high heat; cook beef roast with onion and garlic in hot oil for about 5 minutes to brown.
3. Lift the beef roast out of the skillet and set in a roasting pan. (Just throw away the onions and garlic.) In a bowl, combine wine and water. Then pour half of the mixture on top of the roast.
4. Top roast with 3 of the thyme sprigs. Roast for about 20 minutes, then add the rest of the wine and thyme. Roast for another 25 minutes, until beef reaches an internal temperature of 145 degrees F for medium-rare.
5. Remove from oven and let the meat rest for 10 minutes. Slice and serve with the wine from the pan drizzled over each helping.
