Ingredients
250 g | chickpeas |
2 clove(s) | garlic |
tsp | salt |
5 | red small chili peppers |
1 | lemon, juice of it |
½ tbsp | olive oil |
4 handful | wild herbs, mixed (for salad) or arugula |
4 | scallions, chopped |
1 | bell pepper, red, diced |
4 tbsp | black olives, chopped |
½ | cucumber, sliced, and quartered |
1 tbsp | cumin |
1 tsp | mustard |
2 tbsp | vinegar |
3 tbsp | olive oil |
salt | |
black pepper | |
sugar | |
some | feta cheese (optional) |
Instructions
Soak chickpeas in cold water overnight, and cook next day for about 1 hour or until soft.Grind garlic, salt, chili peppers and lemon juice in a mortar, mix with olive oil and add to chickpeas. Allow to marinate for 1 or 2 hours.
Combine herbs (or arugula), scallions, bell pepper, olives and cucumber.
Make a marinade from cumin, mustard, vinegar, salt, pepper, and some sugar. Add olive oil and combine well.
Put all ingredients together and mix with the marinade. Add some feta cheese, if you like.
