Moroccan carrots recipe details
Ingredients
400 g | carrots |
1 clove(s) | garlic, sliced |
1 tbsp | olive oil |
1 large | onion, sliced |
1 pinch(es) | salt |
1 pinch(es) | sugar |
1 large | lemon, freshly squeezed |
1 tsp | cumin seeds |
2 tsp | Harissa seasoning |
some | coriander leaves, chopped |
some | extra olive oil |
Instructions
Peel the carrots and cook in salted water for about 10 minutes until tender. Drain, dry and slice into 5mm circles.Toast the cumin seeds for about 2 minutes in a dry pan. Set aside.
Over low heat cook onion and garlic until soft, but do not brown.
Mix together the cooked onions and garlic, carrots and cumin with Harissa seasoning, lemon juice, sugar and salt and chopped coriander leaves. Pack into a container and pour over extra olive oil to cover.
Store in the refrigerator for at least 24 hours before serving.
