Lemongrass chicken thai style recipe details
Ingredients
For the chicken: | |
3 tbsp | salt |
2 ½ tbsp | brown sugar |
2 ½ l | water |
3 | chicken legs |
For the paste: | |
3 stalk(s) | lemongrass, white inner parts only, finely chopped |
1 clove(s) | garlic |
1 tsp | freshly ground white pepper |
2 tbsp | white soy sauce |
2 tbsp | olive oil |
1 tbsp | brown sugar |
Instructions
The day before:Cook some of the water and add salt and sugar. Stir until completely dissolved. Let it cool, then combine with the rest of the water and add the chicken legs. Keep in fridge for about 10 hours .
The next day:
Chop lemongrass and garlic coarsely. Pulse all ingredients for the paste in a blender.
Remove chicken legs from the fridge, dry carefully, apply lemongrass paste and marinate in fridge for further 5 hours.
Preheat oven to 230°C. Fry chicken legs for about 50 minutes or until the skin is crispy.
This dish goes well with spaghetti tom yum. While the chicken is roasting, prepare the spaghetti (recipe in database).
