Ingredients
300 g | wheat flour |
1 tsp | baking powder |
7 g | dry yeast |
1 tsp | sugar |
½ tsp | salt |
300 ml | sparkling water, lukewarm |
2 tbsp | cooking oil |
1 tbsp | vinegar |
1 | yolk |
1 | egg white |
butter to grease the baking dish, or baking paper |
Instructions
Grease a loaf pan (25cm) or cover with baking paper. Mix flour with baking powder and yeast. Mix salt, sugar, warm sparkling water, vinegar and oil.Beat egg white stiff. Add liquid to flour and mix well (2min.) Fold in egg white.
Fill dough in loaf pan and brush with the yolk. With a wet knife make a cut in the middle of the bread. About 1 cm deep. Let stand for 15 minutes in a warm place. If necessary renew the cut in the middle of the bread.
Bake for 35 minutes at 200°C. Place a wide bowl with boiling water on the bottom of the oven. After 35 minutes take bread out of the baking dish and place it for 5 more minutes in the still warm oven.
Let cool on a wire rack.
You can vary this recipe in many ways e.g. add 50 g finely diced bacon or rosted onions or both.
