The Welsh faggots recipe is a traditional dish that originated in Wales. These delicious meatballs are made with a mixture of minced pork liver, onions, breadcrumbs, and various herbs and spices. They are then wrapped in caul fat and baked until golden and crispy. This hearty and flavorful dish is often served with mashed potatoes and peas.

Ingredients

500 g pork liver, roughly chopped
2  onions, peeled and roughly chopped
80 g beef suet, shredded
100 g breadcrumbs
½ tbsp dried sage
salt and pepper
300 ml beef stock

Instructions

Place the liver, suet, onions, breadcrumbs and sage into a blender and process until well combined but not too smooth. Season with salt and pepper.

Preheat the oven to 180°C.

Shape the liver mixture into 12-15 balls. Place the balls side by side into a greased shallow casserole dish. Add the stock, cover and bake for approximately 40 minutes. Uncover and bake for another 10 minutes.

Serve with crusty bread and mushy peas.
