Welsh cakes recipe details
Ingredients
300 g | plain flour |
1 ½ tsp | baking powder |
125 g | sugar |
¼ tsp | nutmeg |
1 pinch(es) | large, salt |
175 g | butter |
100 g | sultanas |
2 medium | eggs, beaten |
milk to mix |
Instructions
Sift the flour, baking powder, sugar, nutmeg and salt into a large bowl and mix well. Cut in the butter and blend to resemble breadcrumbs. Add sultanas, eggs and enough milk to mix to a soft dough.Turn out to a lightly floured surface and roll out to about ½ inch or 12mm thick. Cut out the pancakes using a 2½ or 6cm cutter.
Heat a large heavy-bottomed frying pan on a medium heat and grease with a small knob of butter. Place the pancakes in the pan and fry for 2-3 minutes each side or until golden brown. Flip to cook the other side.
Drain on kitchen paper and dust with a little icing or caster sugar if wished. Arrange on a plate and serve warm.
