Apple Pancake recipe

|100 g||flour, all-purpose|
|8 large||eggs, whites only|
|1||Granny Smith apple, peeled, cored, thinly sliced|
|2 tbsp||vegetable oil|
In a bowl, combine the flour, a pinch of salt, and egg whites. Whisk until well blended, then gradually add the milk. Cover with plastic wrap and leave in the refrigerator overnight.
Preheat the oven to 200°C.
Heat the oil in an ovenproof frying pan over medium heat. When hot, pour in all the batter. Let the pancake form a bit of a crust and then top one side of the pancake with the apple slices, sugar, cinnamon, and nutmeg.
Fold over the other half and place the pan in the oven and bake for 15 to 20 minutes. Pancake will puff a bit and bake until golden and the apples have softened.
