Watercress and salmon soup recipe details
Ingredients
225 g | watercress, chopped |
175 g | salmon, skinned and diced |
350 g | potatoes, peeled and diced |
1 ½ liter(s) | vegetable stock |
3 tbsp | crème fraîche |
1 tbsp | olive oil |
1 large | onion, chopped |
salt and freshly ground black pepper, to taste |
Instructions
In a saucepan, heat oil. Add potatoes and onions and cook over low heat for 8-12 minutes. Pour in the stock and bring to a boil. Cook over low heat for 20-25 minutes. Add watercress and simmer until wilted. Remove from heat and allow to cool.Puree the soup and reheat again. Stir in the crème fraîche and season with salt and pepper to taste. Stir in the salmon and simmer for 4-6 minutes, then serve immediately.
