Wasabi noodles with squid recipe details
Ingredients
For the noodles: | |
thin egg noodles for 4, see pack instructions | |
4 tsp | wasabi paste |
6 tbsp | mayonnaise |
1 tbsp | water |
2 tbsp | lemon juice |
1 tbsp | soy sauce |
4 tsp | grapeseed oil |
½ tsp | ground black pepper |
½ tsp | salt |
For the spice mix: | |
150 ml | malt vinegar |
6 large | dried red chillies, roughly chopped |
6 clove(s) | garlic, roughly chopped |
2 ½ | cm piece of fresh root ginger, roughly chopped |
1 tsp | black mustard seeds |
¼ tsp | black peppercorns |
1 tbsp | ground coriander |
1 tbsp | ground cumin |
1 tsp | turmeric |
For the sauce: | |
2 tbsp | grapeseed oil |
300 ml | water |
1 tsp | salt |
1 tbsp | soft brown sugar |
500 g | prepared squid |
Instructions
Boil some water and soak noodles according to pack instructions.Mix the rest of the noodle ingredients in a bowl into a paste. drain noodles, mix together with paste and set aside.
Blend together the vinegar, chillies, garlic, ginger, mustard seeds and peppercorns, then mix together in a bowl with the ground coriander, cumin and turmeric.
Heat the oil in a heavy-based saucepan, stir in spice mix and cook over a low heat for 5 minutes, stirring frequently. Add water, stir well, then cover and simmer the sauce for 15 minutes, stirring occasionally.
Remove lid, increase heat to medium and cook the sauce for 5 minutes, stirring.
Add salt, sugar and squid and cook for 3 minutes, stirring. Stir in noodles, cook for a few mins until hot through, then serve with well buttered thick slices of fresh white bread.
Note:
The squid can be substituted for prawns if prefered.
