Ingredients
4 | chicken breasts |
85 g | watercress, chopped |
1 tsp | chili oil |
3 tbsp | olive oil |
½ | lemon, zest and juice |
1 large | red chili, finely chopped |
1 medium | red pepper, finely chopped |
½ | cucumber, finely diced |
1 | beef tomatoes, peeled and finely chopped |
1 stick(s) | celery, chopped |
1 sprig(s) | mint, chopped |
1 tbsp | extra virgin olive oil |
salt and freshly ground black pepper, to taste |
Instructions
In a bowl, mix together chili oil, olive oil, lemon zest, lemon juice, half of the red chili, salt and black pepper. Marinate the chicken in the mixture for one hour in the refrigerator.In a separate bowl, mix red pepper, cucumber, tomato, celery, watercress, mint, the other half of the red chili with the extra virgin olive oil.
Grill the marinated chicken for 25 minutes or until tender.
To serve, spoon the vegetables on serving plates and place the chicken on top.
