Ingredients
Serves: 4- 1/2 avocado, pitted, peeled, and finely chopped
- 1 tomato, cored, seeded, and finely chopped
- 1 tablespoon chopped fresh cilantro
- 1 teaspoon fresh lime juice
- 1/4 teaspoon ancho chile powder
- 1/4 teaspoon salt
- 4 (8-inch) flour tortillas
- 1/4 cup cream cheese, softened
- 2 ounces smoked salmon, flaked
- 4 thin slices red onion
- 4 teaspoons drained chopped capers
- 2 teaspoons olive oil
Preparation method
Prep: 15 mins | Cook: 10 mins1. Stir avocado, tomato, cilantro, lime juice, ancho chile powder, and salt together in a bowl. Set aside.
2. Spread tortillas with cream cheese and top with salmon, red onion, and capers. Fold in half.
3. Pour 1 teaspoon oil into a large skillet and place over medium-low heat. Cook 2 quesadillas in the hot oil for about 2 minutes, then flip and cook until cheese melts and both sides are golden brown. Transfer to a plate and repeat with remaining oil and quesadillas.
4. Cut quesadillas in wedges and top with avocado salsa.
