Warming beef stew with home made noodles recipe details
Ingredients
1 | onion, halved |
500 g | beef, chuck or brisket |
200 g | celeriac, diced |
500 g | potatoes, peeled and diced |
2 | carrots, diced |
2 medium | eggs |
6 sprig(s) | parsley, chopped |
1 | bay leaf |
1 | clove |
½ tsp | black peppercorns |
salt | |
170 g | flour |
2 l | water |
Instructions
Place the onions cut side downwards into a large saucepan and heat until dark browned. Add the water, a tablespoon of salt (level) and the meat and bring to a boil. Combine the herbs and spices in a tea infuser and put into the broth. Simmer for approximately 1,5 hours, skimming off any scum occasionally.When the meat is tender, add the vegetables and cook for another 15-20 minutes.
Mix the flour with eggs, salt and 75 ml of water. Knead until the dough is smooth and pliable. With aid of a pasta machine, roll out and shape to noodles of your choice. Spread onto a kitchen towel and let dry for 30 minutes. Place into boiling salted water and cook for a few minutes until done.
Take the meat, the tea infuser and the onions out of the broth. Cut the meat into bite-sized pieces and return. Season to taste the stew with salt and pepper. Add the noodles and serve immediately, sprinkled with parsley.
