Vietnamese spring rolls recipe details
Ingredients
500 g | pork, ground |
2 medium | eggs |
100 g | rice Vermicelli (Bun Tai) |
1 | carrot |
1 medium | onion |
1 handful | black fungus (One Yu), from the Chinese shop |
1 pack(s) | rice galettes (Banh Trang), from the Thai shop |
some | lettuce |
some | mint leaves |
some | fish sauce |
1 clove(s) | garlic, minced |
some | lemon juice |
some | chili |
some | sugar |
some | water |
some | oil for frying |
Instructions
Cut the rice vermicelli in small pieces and soak in hot water.Cut the fungus and soak in hot water. Chop the onion and grate the carrot. Mix the meat with onion, carrot, vermicelli and fungus. Soak the galettes in cold water mixed with some sugar and vinegar. For cocktail/finger food size spring rolls cut galettes in half.
Spread the galette on a kitchen towel and dry lightly. Put some of the meat filling into a galette, fold right and left side of galette in and roll tightly up.
Fry the spring rolls in oil.
Mix fish sauce, garlic, lemon juice, chili, sugar and water and serve as a dip.
