Oven Baked Potatoes with Cherry Tomatoes and Spring Onions recipe

|1||spring onion, sliced|
|250 g||potatoes, peeled and cut into 2cm cubes|
|salt and freshly ground black pepper|
|150 g||cherry tomatoes, halved|
|2 sprig(s)||thyme, chopped|
Mix 1 tablespoon of oil with salt, pepper and paprika powder. Divide the potatoes on a lined baking tray, add the spiced oil and toss until well coated. Bake in the preheated oven at 180°C for 20-30 minutes or until the potatoes are cooked.
Add the tomatoes, onions and the other tablespoon of oil and cook for another 5-10 minutes. Season to taste with thyme, salt and pepper and serve.
