Oven baked potatoes with cherry tomatoes and spring onions recipe details
Ingredients
1 | spring onion, sliced |
250 g | potatoes, peeled and cut into 2cm cubes |
2 tbsp | oil |
salt and freshly ground black pepper | |
paprika powder | |
150 g | cherry tomatoes, halved |
2 sprig(s) | thyme, chopped |
Instructions
Mix 1 tablespoon of oil with salt, pepper and paprika powder. Divide the potatoes on a lined baking tray, add the spiced oil and toss until well coated. Bake in the preheated oven at 180°C for 20-30 minutes or until the potatoes are cooked.Add the tomatoes, onions and the other tablespoon of oil and cook for another 5-10 minutes. Season to taste with thyme, salt and pepper and serve.
