Ingredients

For the dough:
200 g flour
2 tbsp oil
1 pinch(es) salt
1 tsp oil
For the filling:
3 cl apple brandy
2 tbsp sugar
50 g raisins
1 kg apples, peeled, cored and diced
½  lemon, juice
60 g almond flakes
80 g sugar
1 tsp cinnamon
80 g butter
50 g breadcrumbs
To garnish:
icing sugar

Instructions

Heat the brandy with 50ml water and the sugar. Add the raisins and allow to soak for an hour.

In a bowl, combine the flour with 2 tablespoons of oil, a pinch of salt and 120ml of lukewarm water. Knead until the dough is smooth and pliable. Form to a ball, brush with oil, place back into the bowl for about an hour, covered and at room temperature.

Sprinkle the apples with lemon juice. Roast the almond flakes until golden. Combine the almond flakes, sugar, raisins, cinnamon and the apples.

Preheat the oven to 200°C.

On a slightly floured kitchen towel thinly roll out the dough, afterwards stretch the dough carefully with your hands as thin as possible.

Melt the butter. Brush the dough with butter and sprinkle with breadcrumbs. Divide the apple mixture on the dough, leaving free about 10cm at the edges. With help of the kitchen towel roll up the dough from the long side. Transfer the strudel into a lined baking tray. Brush with the remaining butter and bake for approximately 20 minutes. Switch down the heat to 180°C and bake for another 30-40 minutes or until the strudel is golden brown and crispy.

Allow to cool a bit. Cut the lukewarm strudel into slices and serve dusted with icing sugar, together with vanilla sauce.
