Alternative beans on toast recipe details
Ingredients
175 g | dried butter or cannellini beans or a tin (175g drained weight) |
1 small | red onion, chopped |
2 clove(s) | garlic, finely sliced |
4 medium | tomatoes, chopped |
1 tbsp | fresh oregano (marjoram) or 1 tsp dried |
1 dollop(s) | tomato puree |
salt and pepper, to taste | |
1 tbsp | olive oil |
2 slice(s) | homemade bread, toasted |
butter, to spread |
Instructions
Soak dried butter beans or cannellini beans in a large pan overnight or for at least 5-6 hours.Place the soaked beans in a colander and rinse with cold water, transfer back to the pan and cover with plenty of water, bring to the boil and boil for 10 minutes. Reduce the heat to simmering and cook for about 1 hour or until the beans are tender. (Do not use elderly beans as they never get tender!)
Fry the onions and garlic in the olive oil until softened, but not browned. Chop the tomatoes and add to the onion and fry until the tomatoes start to shed their juice.
Add the tomato puree and a little water if it looks too dry.
Sprinkle on the oregano and seasoning; cook until a tomato sauce has formed. Add in the cooked or tinned beans and gently simmer for about 20 minutes.
In the meantime toast the bread and just before serving, butter. Pour the beans in the tomato sauce over the toast and enjoy!
