Vicki's oven meatloaf recipe details
This is my mother-in-laws special meatloaf. Easy to make and great for picky eaters (like my wife). Leftovers make great meatloaf sandwiches. I usually double this if for 4 or more. I start cooking for about 45 minutes, and then keep checking the middle for doneness every 15 minutes or so.

Ingredients
Serves: 4- 1 (14 ounce) can stewed tomatoes
- 1 garlic clove, crushed
- 1 egg
- 2 tablespoons parsley
- 1 teaspoon salt
- 1 pound ground meat
- 1 cup crushed saltine crackers
Preparation method
Prep: 20 mins | Cook: 45 mins1. Preheat oven to 350 degrees F (175 degrees C).
2. Blend tomatoes, garlic, egg, parsley, and salt until smooth in a food processor.
3. Combine meat with crackers in a separate bowl. Add 1 1/4 cups of tomato mixture to the meat. Shape into loaf. Place loaf in baking pan and pour remaining mixture over the meat.
4. Cover and bake in the preheated oven until no longer pink in center, 45 – 75 minutes.
