Portuguese beans recipe details
This recipe has been handed down from my great grandmother, who brought it from the Azores. Serve with crusty bread.

Ingredients
Serves: 6- 1 pound dried pink beans
- 6 slices bacon, diced
- 1 onion, diced
- 1 (8 ounce) can tomato sauce
- 1 cup water
- 1 teaspoon ground cumin
- 1 teaspoon whole cumin seed
- pinch of sugar
- salt and pepper to taste
Preparation method
Prep: 9 hours | Cook: 2 hours1. Rinse, sort, and soak beans in water for 8 hours or overnight.
2. Cook beans until tender, covered, approx 1 1/2 hours, adding water if necessary to keep beans covered.
3. Meanwhile, in separate skillet, saute bacon until done, but not crisp. Add onion and saute until translucent. Add tomato sauce, water, ground cumin, cumin seed and sugar; bring to a simmer.
4. Cover, simmer 15 to 20 minutes to blend flavors.
5. Add some of the beans to the skillet to ‘temper’ the mixture.
6. Add contents to bean pot, cover, and simmer another 15 minutes to blend.
