My wife made this childhood favorite for me and I love it. We don’t care for Tuna so we use chicken instead. If you try it with Tuna, use a large can.

Ingredients
Serves: 6- 10 oz Fritos(R) or Corn Chips
- 1 large can chicken
- 2 cans evaporated milk
- 2 cans cream of chicken soup
- 1 can green chiles
- 1 Tbs diced Onion
- Pimentos, as desired
- 1 pound Jack Cheese, grated
Preparation method
Prep: 15 mins | Cook: 35 mins1. Pre-heat oven to 350 degrees F (175 degrees C).
2. Add the Fritos to a 9×13 GREASED pan.
3. Mix all other ingredients, except cheese, together and pour over the Fritos.
4. Add cheese to the top.
5. Bake for 35 minutes uncovered and serve.
