Veggie packed chicken chow mein recipe details

Ingredients
Serves: 2- 1 tablespoon cornstarch
- 2/3 cup chicken broth
- 1 teaspoon soy sauce
- 1/2 teaspoon salt
- 1/4 teaspoon ground ginger
- 1 teaspoon canola oil
- 1/4 pound sliced fresh mushrooms
- 2/3 cup thinly sliced celery
- 1/4 cup sliced onion
- 1/4 cup thinly sliced green bell pepper
- 2 tablespoons julienned carrot
- 1 garlic clove, minced
- 1 cup cubed cooked chicken breast (see footnote)
- 2 tablespoons chow mein noodles
Preparation method
Prep: 15 mins | Cook: 15 mins1. Stir cornstarch together with broth, soy sauce, salt, and ginger in a bowl.
2. Pour oil into a wok and set over high heat. When oil is very hot, add mushrooms, celery, onion, pepper, and carrot. Cook for about 5 minutes, stirring constantly, then add garlic and cook for 2 more minutes.
3. Drizzle with the cornstarch broth mixture. Cook for about 2 minutes to thicken, then stir in chicken and cook until chicken is warm.
4. Serve spooned over rice, with chow mein noodles topping each helping.To cook chicken quickly:
For 1 cups cubed cooked chicken, in medium saucepan over medium heat, in 4 cups boiling water, cook 1/2 pound skinless, boneless chicken breasts (cubed) 5 minutes or until chicken is no longer pink.
