Ingredients
8 rasher(s) | smoked streaky bacon |
2 slice(s) | lean bacon, diced |
1 | onion, chopped |
1 clove(s) | garlic, crushed |
115 g | breadcrumbs |
salt and freshly ground black pepper | |
90 ml | milk |
450 g | beef mince |
450 g | pork mince |
½ tsp | thyme, chopped |
2 tbsp | parsley, chopped |
2 | eggs, beaten |
Instructions
Line a greased loaf tin with the streaky bacon. In a pan, fry the lean bacon until golden and crispy. Add the onion and the garlic and sauté for 1-2 minutes.In a large bowl, soak the breadcrumbs in milk for 10 minutes. Add the minced meat, bacon, onion, garlic, herbs and the eggs. Knead until well combined. Season to taste with salt and pepper. Fill the mixture into the tin and cover with aluminium foil. Bake in the preheated oven at 170°C for 90 minutes.
Turn out the meat loaf and serve in slices.
