Chourico stew recipe details
This just something I threw together and fine-tuned to make it a staple in my house. I have to make a lot to share with my extended family, so I had to post after all of the compliments I get for it. This recipe is hearty, filling, and pretty spicy!

Ingredients
Serves: 12- 3 1/2 pounds red or gold potatoes (cubed)
- 2 cloves fresh garlic (extremely finely chopped or pressed)
- Olive oil as needed
- 1 1/2 pounds fresh green beans (snipped and cut)
- 1 1/2 pounds chourico
- 5 ounces pepperoni (approx)
- 8 ounces favorite red wine (I use Merlot)
- 37 ounces tomato sauce (approx)
- 64 ounces water
- 1 1/2 yellow onion (finely chopped)
- 1/2 teaspoon garlic salt
- 1 teaspoon light salt
- 1 teaspoon dried basil
- 1/2 teaspoon black pepper
- 1 tablespoon crushed red pepper
- 1 teaspoon dried oregano
Preparation method
Prep: 30 mins | Cook: 2 hours 30 mins1. First the painstaking task of cubing potatoes. Wash them well and cube them into hearty chunks (peel on).
2. Use a big stew pot and when you start to cook this recipe I always blanch my garlic in a little oil while I snip my green beans (I would not even try to make this with canned beans).
3. Just as garlic starts to bubble, bury it with your chourico, which should be sliced into big 3/4 to 1-inch. slices.
4. Use solid pepperoni and slice that into big chunks about 1/2-3/4 inches as well.
5. At this time combine all remaining ingredients (liquids first)and stir till it reaches a light boil.
6. Back off heat and simmer for approx. 2-1/2 hours.Tip:
For heartier stew, replace 8 oz. water with tomato paste, but blend in well before adding remaining ingredients.
