Vegetarian tater tot casserole recipe details
A vegetarian version of this great comfort food casserole. You can add the tater tots without baking them first, though the tots will be softer and not crispy.

Ingredients
Serves: 8- 1 (32 ounce) package frozen tater tots
- 1 tablespoon vegetable oil
- 1 white or yellow onion, chopped
- 1 (12 ounce) bag frozen tofu crumbles
- 2 (10.5 ounce) cans condensed cream of mushroom soup
- 8 ounce lite sour cream
- 1 vegetable bouillon cube, crushed
- 1 teaspoon ground black pepper
- 2 teaspoons garlic powder
- 1 teaspoon dried oregano (optional)
- 1 (14.5 ounce) can roasted garlic & onion diced tomatoes, drained
- 2 (7 ounce) cans mushroom pieces, drained
- 8 ounces mozzarella, cheddar, or pepper jack cheese, shredded
Preparation method
Prep: 35 mins | Cook: 35 mins1. Bake tater tots according to directions.
2. Meanwhile, heat oil in large skillet over medium high heat and sauté onions lightly.
3. Add tofu crumbles and saute until cooked.
4. Mix condensed cream of mushroom soup, sour cream, bouillon, and spices in bowl.
5. Remove skillet from heat and add the soup mixture with the tomatoes and mushrooms. Mix well.
6. When tots are done, remove from oven and adjust heat to 375°.
7. Pour 1/2 of the soup mixture into a lightly greased 13 x 9 pan and layer with the tater tots, then top with the remaining mixture.
8. Top with shredded cheese.
9. Bake for 30-35 minutes, or until cheese is melted and browned and casserole is bubbling.
