Salmon cakes take a step up, thanks to a hug from bacon slices. Inspired by Sal’s “Salmon Cakes – Quick, Easy, Great Taste, & Heart Healthy.”

Ingredients
Makes: 16 bacon-wrapped salmon cakes- 1 (15 ounce) can salmon, flaked, 1/2 cup liquid reserved
- 2 egg whites
- 1 small onion, finely chopped
- 1 clove garlic, finely chopped
- 1 1/2 teaspoons Old Bay(R) seasoning
- 1/2 cup Italian seasoned bread crumbs
- 16 slices thick-cut bacon
Preparation method
Prep: 20 mins | Cook: 15 mins1. In a bowl, combine canned salmon liquid, egg whites, onion, garlic, Old Bay, salmon, and 1/2 cup bread crumbs. Cover with plastic wrap and refrigerate for 1 hour.
2. Preheat oven to 375 degrees F and line a rimmed baking sheet with foil.
3. Divide into 16 small balls. Wrap each with a slice of bacon, securing with toothpicks. Place on prepared baking sheet.
4. Bake for 15 to 20 minutes, until bacon is crispy and salmon cake mixture is hot.
