Ingredients

1  simple pizza dough, recipe database
1 small eggplant
2 tbsp cooking oil
some salt
1 medium zucchini
1 medium mild red pepper
2 medium onions
500 ml tomato sauce
1 tbsp dried oregano
salt and pepper
100 g cheese, grated

Instructions

Slice eggplant, salt slices and wrap in aluminium foil. Set aside for 1 hour.

Slice onions, zucchini and red pepper.

Mix tomato sauce with dried oregano, season to taste with salt and pepper.

Heat cooking oil in a frying pan/grill pan. Fry eggplant slices until light brown.

Cover a baking tray with baking paper. Place dough on baking tray. Spread tomato sauce on pizza dough. Arrange all vegetables on top of tomato sauce. Scatter with cheese. Bake at 220°C for 20 minutes.
