Vegetable soup with feta cheese recipe details
Ingredients
2 clove(s) | garlic, chopped |
2 | onions, chopped |
3 | potatoes, peeled and diced |
3 | carrots, diced |
1 stalk(s) | leek, diced |
3 stalk(s) | celery, diced |
3 | courgettes, diced |
3 | tomatoes, peeled and diced |
1 ½ l | vegetable stock |
1 tbsp | lemon juice |
3 tbsp | parsley, chopped |
60 g | Feta cheese, diced |
125 ml | olive oil |
salt and pepper |
Instructions
In a large saucepan, heat the oil. Add the garlic and the onions and sauté until lucent. Stir in the potatoes and other vegetables and cook for 3-4 minutes. Season with salt and pepper.Stir in the vegetable stock and simmer over medium heat for 30 minutes. Add more water, if desired. Season to taste with lemon juice, salt and pepper.
Ladle the soup into soup plates or bowls and sprinkle with parsley and Feta cheese.
