Omelette with Smoked Salmon and Spring Onions recipe

|4 tbsp||olive oil|
|200 g||smoked salmon, sliced|
|1 bunch(es)||spring onions, sliced|
|4 tbsp||sparkling water|
|salt and freshly ground black pepper|
|1||baguette. sliced and toasted|
In a pan, heat the oil. Sauté the onions until slightly golden. Season with salt and pepper. Remove from the pan and set aside.
In a bowl, whisk the eggs with 4 tablespoons of water. Season with salt and pepper.
Heat butter in the pan and bake 4 omelettes, one after the other. Top each with some spring onions and salmon slices.
Serve immediately, together with toasted baguette.
