Omelette with smoked salmon and spring onions recipe details
Ingredients
8 medium | eggs |
4 tbsp | olive oil |
200 g | smoked salmon, sliced |
1 bunch(es) | spring onions, sliced |
2 tbsp | butter |
4 tbsp | sparkling water |
salt and freshly ground black pepper | |
1 | baguette. sliced and toasted |
Instructions
In a pan, heat the oil. Sauté the onions until slightly golden. Season with salt and pepper. Remove from the pan and set aside.In a bowl, whisk the eggs with 4 tablespoons of water. Season with salt and pepper.
Heat butter in the pan and bake 4 omelettes, one after the other. Top each with some spring onions and salmon slices.
Serve immediately, together with toasted baguette.
