Ingredients
2 | carrots, peeled and sliced |
1 small | celeriac, peeled and sliced |
1 stalks | leek, sliced |
1 l | chicken stock |
150 g | ribbon noodles |
salt and pepper, to taste | |
150 g | chicken liver, cubed |
2 tbsp | oil |
1 tbsp | parsley |
1 tsp | marjoram |
Instructions
Cook the noodles in salted water until al dente.In a large saucepan, heat the chicken stock and add the carrots, celeriac and leek. Bring to the boil and cook over low heat for 15 minutes. Add the ribbon noodles, parsley and marjoram and simmer for another minute. Season to taste with salt and pepper.
In a pan, sauté the liver in oil until just done. Season with salt and pepper.
To serve, pour the soup into soup plates and top each with some sautéed liver.
