Ingredients
750 g | boneless chicken thighs |
5 | good size carrots |
500 g | tomato sauce with herbs, alternatively 2 cans of tinned tomatoes with herbs |
500 g | continental lentils, dried |
750 ml | chicken stock |
tarragon | |
salt & pepper | |
vegetable oil |
Instructions
Fry off the boneless chicken thigh fillets in a bit of oil until brown. Remove from the pan and set aside.
In the same pot fry off the carrots for a few minutes. Then add the lentils, tomato sauce and chicken stock. Stir gently and return the chicken thighs into the pot. Let it simmer on a low heat for approx 30 Minutes (or until the lentils are cooked). The liquid will be absorbed entirely in the process.
Season to taste with salt and pepper and add some tarragon. This will add a lovely sweetness to the dish. Serve with wholemeal baguette.
