Ingredients

1 kg green beans, ends trimmed, cut in bite sized pieces
2  green peppers, ribs and seeds removed, cut in thin rounds
3 stalk(s) celery, thinly sliced
500 g cherry tomatoes
5 medium red potatoes, cooked, peeled and sliced
3 large can(s) tuna, drained
1 large can(s) anchovies
10  black Greek olives
10  green olives, pimiento-stuffed
1 large red onion, thinly sliced
2 tbsp fresh basil, chopped
3 tbsp fesh parsley, chopped
2  scallions, finely chopped
6  eggs, hard-boiled, quartered
For the Dressing:
2 tsp Dijon mustard
2 tbsp wine vinegar
1 ½ tsp salt
2 clove(s) garlic, minced
6 tbsp vegetable oil
6 tbsp olive oil
1 tsp fresh thyme, finely chopped leaves
fresh ground pepper, to taste

Instructions

In a large jar with tight fitting lid combine all dressing ingredients. Shake until well blended, then set aside.

Steam beans until tender-crisp, drain and refresh under cold water, then drain again.

Place beans, green peppers, celery, tomatoes and potatoes in a large salad bowl, arranging nicely. Flake the tuna over the vegetables and arrange the anchovies on top. Scatter olives and red onions over all. Sprinkle with basil, parsley and scallions and garnish with quartered eggs.

Toss at the table with the dressing, after the garnished bowl has been presented.
