Ingredients
1 kg | green beans, ends trimmed, cut in bite sized pieces |
2 | green peppers, ribs and seeds removed, cut in thin rounds |
3 stalk(s) | celery, thinly sliced |
500 g | cherry tomatoes |
5 medium | red potatoes, cooked, peeled and sliced |
3 large can(s) | tuna, drained |
1 large can(s) | anchovies |
10 | black Greek olives |
10 | green olives, pimiento-stuffed |
1 large | red onion, thinly sliced |
2 tbsp | fresh basil, chopped |
3 tbsp | fesh parsley, chopped |
2 | scallions, finely chopped |
6 | eggs, hard-boiled, quartered |
For the Dressing: | |
2 tsp | Dijon mustard |
2 tbsp | wine vinegar |
1 ½ tsp | salt |
2 clove(s) | garlic, minced |
6 tbsp | vegetable oil |
6 tbsp | olive oil |
1 tsp | fresh thyme, finely chopped leaves |
fresh ground pepper, to taste |
Instructions
In a large jar with tight fitting lid combine all dressing ingredients. Shake until well blended, then set aside.Steam beans until tender-crisp, drain and refresh under cold water, then drain again.
Place beans, green peppers, celery, tomatoes and potatoes in a large salad bowl, arranging nicely. Flake the tuna over the vegetables and arrange the anchovies on top. Scatter olives and red onions over all. Sprinkle with basil, parsley and scallions and garnish with quartered eggs.
Toss at the table with the dressing, after the garnished bowl has been presented.
