Vegetable skewers recipe details
Ingredients
250 g | courgette, sliced |
2 | carrots, sliced |
250 g | broccoli, in florets |
2 | yellow bell peppers, sliced |
8 | cherry tomatoes |
1 clove(s) | garlic, minced |
4 tbsp | oil |
2 dash(es) | lemon juice |
2 tsp | thyme, chopped |
salt and pepper | |
8 | skewers |
Instructions
In a bowl, mix together the garlic, oil, lemon juice and thyme. Stir in the vegetables and coat with the marinade.Thread the vegetables alternately onto the skewers. Grill or fry in a pan for 3 minutes each side.
Season with salt and pepper and serve.
