Colourful and spicy pasta and vegetable salad recipe details
Ingredients
80 g | pasta |
salt and pepper | |
1 | yellow bell pepper, diced |
2 | tomatoes, diced |
1 | spring onion, sliced |
1 tsp | pine nuts |
1 ½ tbsp | lemon juice |
1 tbsp | oil |
50 ml | vegetable stock |
1 tbsp | ketchup |
chili paste |
Instructions
Cook the pasta in salted water until al dente. Drain the pasta and allow to cool.Roast the pine nuts. In a bowl, mix together the bell pepper, tomatoes, spring onion, pine nuts, lemon juice, oil, vegetable stock and ketchup. Season to taste with salt, pepper and chili paste.
Stir in the cooked pasta and mix well. Allow to soak and check seasoning before serving.
