||fresh parsley, chopped|
||tofu, squeezed to remove excess moisture|
||salt and pepper, to taste|
Heat the oil in a medium. Sauté onions until softened, about 5 minutes. Add the mushrooms and beans and cook for about 5 minutes.
Transfer the mixture to a blender; add parsley, sage, salt and pepper and process unitl smooth.
Transfer the mixture to a medium bowl and add tofu to the mixture. Mix well, refrigerate, covered, until chilled, at least 2 hours.
