Ingredients
Serves: 6- Hickory chips, soaked
- 4 to 6 yellow summer squash, halved lengthwise
- 1 tablespoon olive oil
- Salt and pepper, to taste
Preparation method
Prep: 10 mins | Cook: 35 mins1. Preheat the smoker (or grill with smoker) for 30 minutes with charcoal (if needed) and hickory chips, according to manufacturer’s instructions.
2. Slice squash into bite-sized pieces. Toss with olive oil in a bowl and add salt and pepper to taste. Pour into smoker basket.
3. Set basket in smoker, close lid, and smoke for 30 to 45 minutes, until squash is tender. Serve.
